Lentil Chili (IP)
Ingredients
- 2 TBSP olive oil
- 1 large yellow onion, diced
- 2 stalks celery, diced
- 1 medium jalapeño, seeded and diced
- 4 cloves garlic, minced
- 1 TBSP unsweetened natural cocoa powder
- 2 TBSP chili powder
- 1 TBSP ground cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- 1 TBSP light or dark molasses
- 1 C dried red lentils
- 1 (28-ounce) can fire-roasted diced tomatoes
- 3½ C low-sodium vegetable broth
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
Directions
Set Instant Pot to Saute.
- When Hot, add oil, onion, celery, jalapeño, and garlic and cook until soft (translucent onions)
- Add cocoa powder, chili powder, cumin, paprika, salt, and pepper and stir to combine. Cook for 2 minutes.
- Add remaining ingredients and cook, covered, for 15 minutes. Allow to naturally release pressure for 5 minutes.
