Rolled Sugar Cookies
Ingredients
- 1½ C salted butter, softened
- 2 C white sugar
- 1 C powdered sugar
- 4 eggs, room temperature
- 2 tsp vanilla extract
- 5 C all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp True Lemon (or similar, if available)
Directions
In a large bowl, cream together butter and white sugar until smooth.
- Beat in eggs and vanilla.
- Stir in the flour, powdered sugar, baking powder, lemon, and salt until just combined.
- Cover, and chill dough for at least one hour (or overnight).
- Preheat oven to 400 degrees F.
- Knead dough then roll out on floured (or powdered sugared) surface 1/4 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
- Bake 6 to 8 minutes in preheated oven. Cool completely.
