Chicken Black Bean Chili (IP)
Ingredients
- 1½ lbs chicken breast, cubed
- 1 C dry black beans, rinsed
- 3 10oz cans Rotel (or equivalent)
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 medium carrots, diced
- 1 medium jalapeno, minced
- 1 large sweet bell pepper, diced
- ½ green bell pepper, diced
- 2 tsp chili powder
- 2 tsp cumin
- 2 tsp dried oregano
- 4 C chicken broth
- 2 tsp salt
- 1 tsp sugar
- 1½ C frozen corn
- 1 C rice
Directions
Add all ingredients to Instant Pot and cook for 30 minutes on "Soup" setting.
- Allow to naturally depressurize for 20 minutes before opening.
- Serve with cheese & sour cream.
