Mediterranean Pita Fill
Ingredients
- 1 C shredded carrots
- 1 C cucumber, cut into matchsticks
- ¼ C Kalamata olives, chopped
- ¼ C feta cheese, crumbled
- 1 TBSP lemon juice
- 2 TBSP Extra Virgin Olive Oil
- Salt and pepper
- Mini pitas, cut in half
Directions
- In a medium bowl, mix everything together then stuff about 1/4 cup of the mixture into each pita half. Wrap it up and take it with you!
