Fiber Granola Bars
Ingredients
- 2½ C oatmeal
- ¼ C honey
- 4 TBSP unsalted butter
- ⅓ C brown sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- ⅔ C psyllium powder
- ⅓ C chopped almonds
- ½ C almond butter
Directions
- Line an 8x8 Pyrex dish with parchment paper.
- Add oats and almonds to mixing bowl.
- Heat honey, butter, and brown sugar together on stove. Bring to a slow simmer and allow to simmer for 1 minute.
- Remove from heat. Add almond butter, salt, vanilla extract, and psyllium powder. Stir until well combined.
- Add liquid mixture to mixing bowl, stir until all oats are covered.
- Pour mixture into lined 8x8 Pyrex, pressing down with wax paper until evenly distributed.
- Cool for 2 hours in refrigerator.
- Remove and cut into 16 bars. Wrap individual bars and freeze for best keeping.
