Vegetable Cheese Pie
Pie Crust Ingredients
- 2 C grated potatoes (~1½ lbs)
- 1 egg, beaten
- ½ tsp salt
- ½ C chopped onion
Filling
- 1½ C grated cheddar cheese
- 1 cauliflower, broken into florets
- 1 bunch of broccoli
- 1 clove garlic
- 1 C chopped onion
- 3 TBSP butter
- ¼ tsp dried thyme
- ½ tsp dried basil
- ½ tsp salt
- 2 eggs
- ¼ C milk
- ¼ tsp pepper
- ¼ tsp paprika
Pie Crust Directions
- Rinse grated potatoes, drain well, and combine all ingredients.
- Pack into a 9" round pan or cast iron skillet.
- Bake at 375 for 40 minutes.
Putting it all together
- Saute onions and garlic.
- Add herbs and vegetables, cook covered for 10 minutes.
- Layer half cheese into crust mixture, then vegetables, then remaining cheese.
- Whisk milk and eggs together, then pour over top.
- Sprinkle with paprika and pepper.
- Bake at 375 for 35-40 minutes.
